Just last month I wrote about how I didn’t realize I liked soy until recently. What a marvelous discovery to learn that I was wrong and that soy was not just this thing “soy” in my soy sauce 🙂 Yes I admit it that’s what I thought before but now I’m on the road to soy and discovering how versatile it can be. All those people who order their soy lattes from Starbucks and other delicious soy concoctions were onto something and now so am I!

There are so many delicious recipes to be created with soy that I almost don’t know where to start but in the end, like a kid, I want my dessert first 🙂 So here are five recipes that I would love to try.
Soy-Silken Dark Chocolate Pudding
Prep Time: 10 minutes
Mexican-Style Chocolate Soy Pudding – Stir in a pinch of ground cinnamon and cayenne pepper to taste, layer with whipped topping and top with chocolate shavings.
Caramel Banana Chocolate Soy Pudding – Layer pudding with banana slices and whipped topping; drizzle with caramel sauce.
How about a Coffee Chococcino, doesn’t it look delicious?!
I love my coffee in the morning and sometimes I would love something a little different and maybe decadent but I don’t want to pay $5 all the time for one. Well I won’t have to pay that as I can try the chococchino and I think it will taste like a decadent drink but without all the fat and calories! Appetizer time! Tofu Jalapeno Poppers
Time to stop thinking of chocolate so let’s talk appetizers. I love appies more than entrees a lot of times and we like to have friends over so it’s always great to have yummy appy ideas on hand and this look pretty good to me. I love spicy and from what I see these tofu jalapeno poppers look like they would be a hit in my home! I think even a little dip on the side for these would be a nice addition!
Speaking of dips how about a Soy and Spinach Artichoke Dip?
You can’t go wrong with a dip with some breadsticks, crusty bread or tortilla chips to go with it. This is a great twist on the Spinach and Artichoke dip which most people love. Better yet this Soy and Spinach Artichoke Dip is low in carbs since you use tofu instead of the higher fat ricotta so we don’t have to feel guilty eating it. We can just enjoy eating it and maybe even spice it up a bit with some chili flakes or sprinkle a little shredded parmesan or asiago cheese on top.
How about an easy entree like the Beef Salad with Ginger Soy Dressing?
Even though I always want dessert first we can’t forget about having a nice entree and I think this Beef Salad with Ginger Soy Dressing is a great idea. Having some nice salad greens, I like a spring salad mix with the green leaf lettuce, radicchio, some edamame and I might even add a little spinach too. I like everything they include in this recipe and it’s quick and easy only 20 minutes prep time for an entree is great! I like making my own dressings then I will know exactly what’s in it making this meal overall a healthy and tasty choice.
